Peanut Butter Love: The Recipe
Step 1
Make chocolate cupcakes. I prepared them from a box (Duncan Hines Super Moist Dark Chocolate Fudge), but you can use any recipe you like. I also substitute 1/4 cup applesauce and 1/4 cup egg white in lieu of 3 eggs (because eggs suck to carry home from the store). This makes the cake part more crumbly and fudgy and delicious, if you ask me.
Step 2
Make icing. I used a can of whipped icing in plain white. I prefer to eat homemade icing, since I hate hydrogenated oils and generally any ingredients I can't pronounce. Today I was lazy though. Anyway, 1 can of icing + 1/3 cup of natural peanut butter (peanuts + salt = natural) does the job.
Step 3.
Decorate! I was pretty pissed that Food Emporium didn't have any sprinkles or confetti, or I would have had a lot more fun with this part. I was pretty much left to decorating with plain peanut butter on top of icing. For not having any decorating tools I think they came out pretty!
Step 4.
Give them all away. Because at this point you've already eaten a few "mistakes," and licked a spoon or three. But you sure had fun!
Bonus points if you give them to someone who stepped on your shoe.
